Cocktail Toast Bites

This is a recipe from my aunt. She would serve these every Christmas Eve.

Cocktail Toast Bites

Servings 30 toasts

Ingredients
  

  • Cocktail Pumpernickel Bread
  • Cocktail Rye Bread
  • Mayonnaise
  • Dehydrated onions
  • Swiss Cheese
  • Cheddar Cheese
  • Pepperoni

Instructions
 

  • Please dehydrated onions in water to reconstitute them for 30 minutes. Drain and pat dry.
  • Heat over to 375F
  • Lay cocktail breads on a baking sheet. If you wish the bottoms to be crisp, place cooling rack in baking sheet and place bread on cooling rack.
  • On half the slices of bread add a layer of mayonnaise. This should be thick enough that the bread is not seen through the mayonnaise. Sprinkle rehydrated onions over the mayonnaise. Cover with Swiss cheese
  • On the other half of the bread, place cheddar cheese. Please a slice of pepperoni on top.
  • Bake uncovered for 15 minutes.

Meatball Bites

Ingredients
  

  • 1 package Puff Pastry Sheets
  • 3 large Meatballs
  • 3/4 cup Marinara Sauce
  • 3/4 cup shredded Mozzarella Cheese

Instructions
 

  • Cut pastry sheets into 9 pieces. Place in mini-muffin pan making cups.
  • Divide Marinara Sauce and add half into pastry cups.
  • Cut meatballs into 6 pieces each. Divide and add meatball on top of marinara sauce.
  • Divide and add the other half of the marinara sauce over meatballs.
  • Cover in Mozzarella cheese.
  • Bake for 20 minutes.

Ham and Cheese Bites

Ingredients
  

  • 1 package Puff Pastry Sheets
  • 1 cup Chopped Ham
  • 1 cup Shredded Swiss Cheese
  • 1/4 cup Mustard I like a spicy mustard.

Instructions
 

  • Cut pastry sheets into 9 pieces. Place in mini-muffin pan making cups.
  • Divide mustard and add into pastry cups.
  • Divide and add ham on top of mustard.
  • Divide and add Swiss Cheese on top of ham.
  • Bake for 20 minutes.

Notes

This is a great way to use leftovers from a ham dinner.
Great when combined with Thanksgiving Bites and Meatball bites.

Thanksgiving Bites

  • 1 package Puff pastry sheet
  • 1 cup cooked turky
  • 1 cup stuffing
  • 1/2 cup gravey

Instructions
 

  • Cut pastry sheets into 9 pieces. Place in mini-muffin pan making cups.
  • Divide gravy and add into pastry cups.
  • Divide and add turkey on top of gravy.
  • Divide and add stuffing on top of turkey.
  • Bake for 20 minutes.

Notes

This is a great way to use Thanksgiving leftovers. Turkey, stuffing, and gravy freeze well for up to 3 months.
This is a great appetizer for Christmas.

Cheesy Toast

Ingredients
  

  • 1 Package Cocktail Bread
  • 1 Large Beefsteak Tomato
  • ½ lb. bacon
  • 1 package of American cheese slices

Instructions
 

  • Cut bacon in quarters and fry until crisp. Drain off fat. Slice Tomato 1/8” think. Cut each slice into ¼ wedges. Cut cheese in quarter wedges.
  • Place bread slices on a cookie sheet 1/8” apart. Place cheese, tomato and bacon on top.
  • Place in broiler for 5 minute or until cheese has melted or browned. Serve hot.

Brie Puff Pastry Pockets

Brie Puff Pastry Pockets

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes
Servings 18 Pockets

Ingredients
  

  • 1 Box Puffed Pastry Sheets
  • 1 Wedge Brie Cheese
  • 3 tsp Raspberry Jam
  • 3 tsp Strawberry Preserves
  • 3 tsp Orange Marmalade
  • Egg Wash

Instructions
 

  • Preheat oven to 375 F
  • Defrost puff pastry sheets and cut each sheet into 9 squares.
  • Add 1/2 tsp brei cheese to center of pastry square.
  • Add 1/2 tsp jam, preserve, or marmalade to center of pastry square.
  • Brush egg was on edge of pastry square and fold to seal into triangle or purse.
  • Line cookie sheet with parchment paper and place puff packets 1 inch apart.
  • Bake for 20 - 30 minutes until light brown.

Notes

These can be served hot or cold.
For variety, substitute herbs for sweet jams.

Garlic Dipping Sauce

Garlic Dipping Sauce

Servings 1 cup

Ingredients
  

  • 1 cup light olive oil
  • 1/3 cup grated Parmigiano-Reggiano
  • 1/8 cup diced garlic
  • 1/8 tspn crushed red pepper flakes
  • 1 wide mouth Mason jar

Instructions
 

  • Add all ingredients to Mason jar. Shake vigorously.
  • Store in refrigerator.
  • Best served with warm Italian bread.

Notes

Add more ingredients after each use.
Garlic flavor increases over time.
