Corn Bread Taco Casserole

Ingredients
  

  • 1 lb ground beef
  • 1 package taco mix
  • 1 can kidney bean
  • 1 lb grated cheddar cheese
  • 1 box corn muffin mix like Jiffy
  • 1 can cream corn
  • 1 can chopped chili pepper
  • 1 pt heavy cream

Instructions
 

  • Brown the ground beef. Drain and rinse. Drain kidney beans and add to beef. Follow instructions on taco mix.
  • Combine corn muffin mix, cream corn and enough cream to make batter. It should be thick, but still be able to pour. Add half can of chili peppers and a half the cheese.
  • Spray an 8x8 pan with cooking spays. Pour half corn bread mix. Place beef mixture over corn bread. Cover with cheese. Pour remaining corn bread mix over beef.
  • Bake according to corn bread instructions, usually 450 for 20 minutes.
