Ingredients
  

  • 2 Boneless Chicken Breast
  • 3/4 cup Diced Celery
  • 3/4 cup Diced Brown Onion
  • 3/4 cup Dried Sweet Cranberries
  • 3/4 cup Diced Walnuts
  • 1 cup Mayonnaise

Instructions
 

  • Preheat over to 350. Please chicken breasts in baking pan with 1 inch of water. Season to taste. Bake 30 minutes.
  • After chicken cools, cut into 1/2 inch cubes.
  • Add chicken, diced onions, diced celery, cranberries, and walnuts into a large bowl.
  • Add mayonnaise and mix thoroughly.

Notes

For best flavor, make salad 2 - 3 hours before serving.
Hearty multi-grain bread goes best with this recipe.
