Chicken Salad
Ingredients
- 2 Boneless Chicken Breast
- 3/4 cup Diced Celery
- 3/4 cup Diced Brown Onion
- 3/4 cup Dried Sweet Cranberries
- 3/4 cup Diced Walnuts
- 1 cup Mayonnaise
Instructions
- Preheat over to 350. Please chicken breasts in baking pan with 1 inch of water. Season to taste. Bake 30 minutes.
- After chicken cools, cut into 1/2 inch cubes.
- Add chicken, diced onions, diced celery, cranberries, and walnuts into a large bowl.
- Add mayonnaise and mix thoroughly.
Notes
For best flavor, make salad 2 - 3 hours before serving.
Hearty multi-grain bread goes best with this recipe.
